Title: Lemony Cheesecake with Fresh Fruit

  Vegetable cooking spray
1/4cGraham cracker crumbs
16ozFat free cream cheese (NOT product in tub)
1cnEagle Brand Fat Free or Low Fat Sweetened Condensed Milk (NO
4 Egg whites
1 Egg
1/3cReaLemon lemon juice from concentrate
1tsVanilla extract
1/3cUnsifted flour
1cFresh assorted fruit

Preheat oven to 300 degrees F. Spray bottom of 8-inch springform pan with cooking spray; sprinkle crumbs on bottom of pan. In mixer bowl, beat cheese until fluffy. Gradually beat in Eagle Brand until smooth. Add egg whites, egg, ReaLemon and vanilla; mix well. Stir in flour. Pour into prepared pan. Bake 50 to 55 minutes or until center is set. Cool. Chill. Serve with fruit. Refrigerate leftovers.
